1 bottle 2019 Edna's Rosé
375ml clear apple juice
¼ cup caster sugar
1 tsp vanilla bean paste
4 whole cloves 2 cinnamon sticks
3 whole star anise
6 cardamom pods
1 red apple, very thinly sliced
- Use a vegetable peeler to peel 4 strips of rind from orange, avoiding the white pith, then cut in half and juice half the orange. Chop the remaining orange half.
- Place orange rind, orange juice and chopped orange in a saucepan. Add wine, apple juice, sugar, vanilla, cloves, cinnamon, star anise and cardamom. Place over medium heat and bring to a simmer.
- Reduce heat to low. Cook for 5 mins or until aromatic. Remove from heat.
- Add Cointreau and apple slices. Stir to combine. Divide among serving glasses and serve immediately.
