1996 Cabernet Sauvignon Merlot
This wine was made from specially selected Cabernet Sauvignon and Merlot grapes, which were blended prior to fermentation.
Growing conditions leading into the 1996 vintage were excellent. Although temperatures were above average in January, there were two good falls of rain which maintained the vines in top condition. Milder weather in February and March, and then a relatively warm April allowed the fruit to ripen in both flavour and sugar.
The must was fermented in stainless steel for seven days, then run off skins at 2 Baume and transferred to new French oak hogsheads and American oak puncheons and barriques. After completion of fermentation in barrels, the wine was racked off lees, the barrels rinsed and the wine returned. The wine then spent a further two years in oak prior to being bottled in February 2002.
TASTING NOTES: (Tasted 1998)
COLOUR: Medium to deep red with purple tints.
BOUQUET: Ripe berry Cabernet fruit is complemented with vanillum oak and plummy Merlot character.
PALATE: Rich sweet fruit with fine grained tannins contribute to a medium weight palate, with great flavour and elegance. The finish is long and dry.
